Pasta with sardines

This is one of the several Trapani dishes where sweet and salted food mix to give an original triumph of tastes. The main ingredient is fresh sardines, that “poor” blue fish which has always belonged to local popular tradition. The main characteristic of this first delicious plate is the presence of pine nuts and raisins, which marry well with the pronounced taste of the sardines. To finish off the dish, some wild fennel gives the serving its characteristic aroma.
