The salt extracted from the sea around Trapani is the best in Italy . Its nutritional elements and its high content of oligo-elements (magnesium, potassium, fluorine and iodine) confer to it a better flavour than average, allowing some 30% less consumption. It is thus advised that for diets with a low salt intake and for those having hypertension problems. Much appreciated is the flower of salt, reaped from the thin veil forming at the surface of the pans in windless days; it is strictly collected by hand and is a salt with a delicate flavour, which is very rich of magnesium. At Trapani one can also find small cartons of aromatised salt (citrus flavour, juniper, sage…), all so ideal for an original and nourishing gift.
